Chunky Avocado and Black Plum Salad Over Mache Rosettes



Serves 4

2 ripe large Haas avocados, halved, pitted, peeled, and cut into 1-inch chunks


3 black plums cut into 1-inch chunks ½ pint grape tomatoes, cut in half 1 large red onion, thinly sliced 2 cups mache rosettes, baby watercress is nice too ¼ cup olive oil ½ fresh lemon, juice and microplaned rind 1-teaspoon honey, or to taste 1 tsp ground coriander Coarse kosher salt and freshly ground pepper to taste

  1. Place the avocados, black plums, onions, and tomatoes in a bowl.

  2. Dress with olive oil, and then squeeze the lemon juice over the mixture.

  3. Drizzle with the honey. Season with coarse kosher salt, pepper and coriander.

  4. Gently toss. Mound the mixture over mache rosettes on individual salad plates. Serve immediately.
