I have been using this peeler for years. When I first inquired as to what peeler is the absolute best on the market, my supplier told me that the Kuhn Rikon is the sharpest and best peeler for professional chefs. It has not disappointed. It remains sharp. I use it to peel large vegetables like butternut squash. To peel the rind off citrus without the pith. To thinly shave root vegetables, like carrots, for salads.
