How about a quick hearty snack you can make simple and easy. It’s full of protein and high in fiber. Gluten free, lactose free, and if you are worried about your fat intake this might be ideal. A cup of this and you’re good to go. If you haven’t tried this already or even if you have, here is my version of crispy roasted chickpeas.
Crispy & Spicy Chickpea Snack
1 19 oz can of Garbanzo Beans aka Chickpeas, rinsed, drained + dried 2 tablespoons extra virgin olive or canola oil 1 ½ teaspoons Paprika or your favourite spice blend(I used this Costco brand) 1-½ teaspoons Garlic Powder 1 ½ teaspoons onion flakes or powder ½ tsp Dried Thyme1/2-1tsp Chili pepper flakes or powder, (I used Aleppo Pepper…add as much or little depending on how spicy you want) 1 tsp Coarse Kosher Salt Freshly ground black pepper to taste
Preheat oven to 400 degrees F
In a bowl, toss chickpeas with oil
Mix seasoning together and combine with chickpeas
Roast for 25 to 35 minutes or until preferred crunchiness is achieved
If you want to make a sweet snack. You can caramelize the chickpeas after they’ve roasted with just olive oil. Then in a frying pan, add a little butter and olive oil or just olive oil, add sweet spices like cloves, cinnamon, and ginger. Pour in some honey, maple syrup, or brown sugar. Let them cool on some parchment or in a bowl.
OR
Just sprinkle with some cinnamon and sugar of your choice once they come out of the oven.
OR
For a healthy cheesy taste, sprinkle some nutritional yeast.
